For Mirosa - key Lime Pie

3 eggs, separated
1 (14oz) can Sweetened Condensed Milk
1/2 cup lime juice
1 (9 inch) unbaked pie crust
1/2 tsp. cream of tartar
1/3 cup sugar

  1. Preheat oven to 325°F. In medium bowl, beat egg yolks; gradually beat in sweetened condensed milk and lime juice. Pour into pie crust.

  2. Bake 30 minutes. Remove from oven. Increase oven temperature to 350°F.

  3. Meanwhile, for meringue, with clean mixer, beat egg whites and cream of tartar in large mixing bowl to soft peaks. Gradually beat in sugar, 1 tbs. at a time. Beat 4 minutes or until stiff, glossy peaks form and sugar is dissolved.

  4. Immediately spread meringue over hot pie, carefully sealing to edge of crust to prevent meringue from shrinking. Bake 15 minutes. Cool 1 hour. Chill at least 3 hours. Store covered in refrigerator.

I tried the recipe you PMd me and LOVED the key lime part, but kept messing up the topping. After reading this recipe, I see why. I had no idea it was just suppose to go on towards the end.

Next shopping day I’m going to give it another go!
