First of two recipes that take very little time.
I hate the packaged pancake mix, expensive and not necessary, its not convenience when it takes about the same to make from scratch.
2 large eggs
1 cup of buttermilk or whatever milk you want
1 teaspoon vanilla essence
2 good teaspoons maple syrup or other light syrup, or substitute with sugar
1/2 level teaspoon salt
2 teaspoons baking powder
2 teaspoons olive oil or other light/healthy oil
1-1/2 cups of wholewheat flour. Or substitute white flour
In a mixer, beat eggs add milk, vanilla, syrup and oil. No worries about overbeating. Add dry ingredients and beat for another minute or so, get some air in there!!..
Cover for a few minutes with a tea towel, can be cooked immediately. None stick pan, medium heat, don’t burn.
As with any pancakes, the rest is up to you, I like the full fruit preserves myself, but your basic motor oil grade syrup will do, depends on what floats your boat.
