1 gnome heart (optional)
2 teaspoons vegetable oil
2 16oz cans black beans
1 16 oz can pinto beans
1 20oz can stewed tomatoes
1 onion, chopped
1 bell pepper, (red or green), chopped
2 whole jalapeno chile pepper, seeds removed and chopped
2 Tbsp garlic, minced
2 tsp cumin
1 tsp oregano
2 tsp chili powder
1 cup corn
Cayenne powder to taste (for the epic version)
Sautee vegetables and cilantro in a large skillet. Cook over medium heat until veggies are soft (about 5 mins). Transfer vegetables to a large pot, add spices, tomatoes (undrained)and beans and simmer for 15 mins.
You can add extra water for a ‘soupier’ consistency.
Use only one jalapeno and omit the cayenne if you don’t like spicy.
Omit the gnome heart if you don’t eat gnomes…
