Roasted Curry and Lemon Cauliflower

I thought I hated Cauliflower until someone recently suggested roasting it. With a little digging to figure out the best roasting method, I found this amazing recipe. If you like curry and having your kitchen smell like a good Indian restaurant, make this NOW! I tend to let it cook longer than the recipe says to because the browning tops of the florets taste like they have been breaded then. Super healthy, and it doesn’t even taste like a veggie. Enjoy!=D

Easy, healthy, delicious, flavorful, colorful…

Yield: 4-6 servings

Prep Time: 15 Minutes

Cook Time: 30-40 minutes

Total Time: 1 hour-ish
Ingredients:

1 head Cauliflower, cut into bite-size florets

1 teaspoon Lemon Zest

1 tablespoon Curry Powder

1 teaspoon Garlic Powder

1/2 teaspoon Turmeric

1/4 teaspoon Sumac

4 tablespoons of Olive Oil

Kosher salt, to taste

Black Pepper, to taste

1 tablespoon minced Fresh Parsley {optional}
Directions:

Preheat your oven to 400 degrees.

In a large bowl combine the lemon zest, curry, turmeric, garlic powder, sumac and olive oil. Whisk together until combined.

Pour all of the cauliflower and the remaining oil and spices onto a rimmed sheet pan. Roast in the oven for 30-40 minutes. Toss the cauliflower and rotate the pan to ensure even toasting.

Once roasted; season with kosher salt and black pepper to taste, sprinkle with chopped parsley and serve.
